Ingredients (4 servings):

  • 2 medium eggplants.
  • 2 tablespoons of olive oil.
  • 2 minced cloves of garlic.
  • 1 ½ cups of Basmati rice.
  • 1 teaspoon of dried Italian seasoning.
  • ¼ teaspoon of salt.
  • 12 pitted black olives.
  • 2 tablespoons of drained capers.
  • 1 can of diced tomatoes.
  • 2 cups of vegetable broth.
  • 1 cup of ricotta cheese.
  • ¼ cup of Parmesan cheese.
  • ¼ cup of chopped fresh basil.

Preparation:

  1. Prepare the oven. Preheat it to 350 degrees F.
  2. Cut the eggplants in half lengthwise. Use a spoon to scoop out the eggplant flesh. Leave a-thick shell. Reserve the flesh. They have to look like a boat.
  3. Place the eggplant on a baking tray. Brush 1 tablespoon of olive oil inside the eggplants. Bake for 20 minutes. Set aside.
  4. In a large saucepan, pour a tablespoon of olive oil and heat at medium temperature.
  5. Add chopped eggplant flesh, garlic, rice, Italian seasoning, salt, black olives, and capers.
  6. Mix and cook for 5 minutes.
  7. Incorporate diced tomatoes and vegetable broth. Cook until boiling.
  8. Reduce heat, and simmer for 10 minutes or until rice is done.
  9. Fill the eggplant with this mixture.
  10. Add ricotta cheese to the stuffing.
  11. Sprinkle with some Parmesan cheese.
  12. Bake for 15 minutes.
  13. Serve with chopped fresh basil at the top.

Chinese stuffed eggplant

Ingredients (4 servings):

  • 2 medium eggplants.
  • 1 cup of sticky rice.
  • 1 ½ cups of water.
  • 8 shiitake mushrooms.
  • 1/3 cup of chopped green onions.
  • 2 tablespoons of oyster sauce.
  • Salt to taste.
  • 1/2 teaspoon of white pepper.
  • Olive oil to taste.

Preparation:

  1. Heat oven to 250 degrees F.
  2. Slice the eggplants half lengthwise. Take out the flesh with a sharp paring knife. Leave some flesh to make a thick container. Save the flesh for the stuffing.
  3. Set aside the eggplants.
  4. Prepare the stuffing. Rinse rice until the water is clear.
  5. In a saucepan, add rice with water and cook until the rice is tender.
  6. In a frying pan, incorporate olive oil and heat at a high temperature.
  7. Add eggplant flesh and mushrooms. Cook for 5 minutes.
  8. Incorporate green onions, oyster sauce, salt, white pepper, and ½ cup of water.
  9. Simmer for 5 minutes.
  10. Add cooked rice and combine very well.
  11. Place the mixture in the eggplant shells and bake for 25 minutes.
